The same goes for butter and olive oil – it’s up to you to choose which one you prefer. For some recipes butter is preferred, while for others the taste of olive oil suits best. It’s also a matter of what you have at home. In all cases, palm oil should be avoided.

- cheese of your choice (mozzarella, emmental, goat cheese, counted …)
- fresh tomatoes or sun-dried tomatoes
- oregano (optional)
- fresh basil for garnish
- pitted olives (optional)
You slice the bread if you don’t have any bread already sliced. Then you cut the tomatoes into slices or the sun-dried tomatoes into pieces. Place the cheese slices (if you are using mozzarella, salt it first). Add the olives, oregano and pepper. Then put in the oven and cook for 5 minutes. We slice the bread. Either we put it in the toaster or in the oven. What is vegan cheese ?
You can buy vegan cheese at the store or you can make it yourself at home. We have chosen an easy vegan cheese recipe: cheese with cashew nuts and spices
- a cup of cashew nuts
- 2 tablespoons of nutritional yeast
- 2-3 tablespoons of lemon juice
- 2 tablespoons of water
- 1 tablespoon of white wine vinegar
- clove garlic
- 2 pinches of salt
- fresh basilic
Soak the cashews in about 2 cups of water for at least 4 hours (it’s best to leave them overnight, actually). Drain the cashews completely and put them in a blender or food processor with the nutritional yeast, lemon juice, 2 tablespoons of water, white wine vinegar, garlic, sea salt and black pepper. Blend until you have a very smooth cream. Transfer the cashew cream to a bowl and stir in the chopped basil, oregano and thyme.
You can enjoy the cheese as is or put a small colander in cheesecloth, then pour the cashew cheese into the cheesecloth, fold the cheesecloth over it and place the colander on a medium bowl to hang it up. Then refrigerate overnight. Once refrigerated, unwrap the cashew cheese, and put it in a platter and garnish with sea salt, black pepper and chopped herbs. Leftovers leave in the fridge.
